Tofu

trying tofu again and actually liking it this time

Tofu as a meat substitute is pretty nice and I've finally been enjoying making recipes that require meat. My preference for tofu is less of a vegetarian thing/ vegan thing and more of a food phobia. I am scared of choking on meat because of how chewy it is so I don't eat it. But, with tofu I can control how chewy it gets, and make it soft enough so that I'm not scared to swallow it. Tofu meat recipes usually say to press and freeze the tofu, but I find unnecessary. You only really need firm tofu, the baking process will take the water out. Freezing creates layers and makes it chewy, which is why it's recommended, but again I don't like that so I don't do it.

Now I actually enjoy eating a whole lot more because I'm not nervous all the time. Tofu wings with buffalo sauce is my go to now, along with tofu crumble and cheese (good with tacos). I also wanna try meatballs & tomato sauce because I'm craving garlic bread and need something to go with it.
